So, she invited me over for some cooking lessons with some other ladies. I don't know how often she does this, but sign me up!! The menu for the day was spring rolls, Thai pad, and green curry. She goes all out when she does them. We each get an apron and our own tools and chopping board. We're given the ingredient list and a pen.... we must work for the "how to" part!
This was the day cargo arrived, so I got through most of the spring roll part and missed the rest. However, I made it over after everything was finished and got to try it all. Yum, yum, yum. She even sends you home with little "take-aways"... this day was a special Thai seasoning pack and veggie shredder! A good time was had by all... even if she didn't let us crack open the wine until lunch was served! ;)
Anyway, I asked her if I could post her spring roll recipe online.... here we go with my best interpretation of what we did that morning! ;)
Pon's Spring Rolls
spring roll wrappers
chicken mince
black mushrooms (cut thin)
carrot (shredded)
cabbage (shredded)
glass noodles
garlic
white pepper
coriander root
oyster sauce
soy sauce
oil (sunflower)
chicken powder
Mortar and pestle the garlic, white pepper, and coriander root.
Then cook that in a bit of oil in the wok.
Then add chicken mince, breaking it apart until cooked;
Add shredded carrots, cabbage, and mushrooms. Stir. Add oyster sauce and soy sauce.
Then add noodles (pre soak noodles in tepid water for 5 minutes).
Stir! Add the secret ingredient of chicken powder. Then let sit to cool.
Wrap them (using whisked egg whites to seal the edges). Cook until golden brown! Or you can leave them in the fridge or freeze uncooked ones for later. We each also took away a big baggie of uncooked spring rolls! We made over 50! :)
Sorry no pictures for the last bit.... I wrapped quite a few, but bolted out wearing my apron when I got the call that the cargo truck was lost in my neighborhood! Yipee! Cargo! I now have pots and pans! My turn to cook! Let the disasters begin! Luckily, if things go bad, I can walk next door to some yummy food! :) Yeah, Pon!!! P.S.
